Eilene's Pumpkin Soup


-1 small onion, diced

-2 cups cremini mushrooms, sliced

-1/4 cup butter

-1/4 cup flour

-4 cups chicken broth

-1 cup pumpkin pureé 

-1 cup light cream

-2 tbsp. honey

-1 tsp. nutmeg

-salt, pepper and croutons to taste



Sauté onion and sliced cremini mushrooms and in butter. Remove from heat and stir in flour. Add chicken broth and pumpkin pureé . Bring to a boil, then simmer for 20 minutes. Stir in light cream,  honey and nutmeg. Serve topped with croutons. Enjoy!  Enjoy          

Serves 4-6 bowls
